Butter biscuits

You can change this one around and make it flavoured or ice them. This made about 300 smallish biscuits, the dough can be frozen if you dont need so many.

Ingredients
500g of plain flour (dont need to weigh it, its half a bag)
2 mugs of sugar
1tsp of vanilla extract
200g of butter
3tbsp of water

Method
Melt the butter and all the ingredients and kneed it till it looks like bread crumbs. Add about 3tbs of water and make a dough. Then leave in the fridge for half an hour then roll out at cut. Bake at 180c for about 10 mins. Take off the baking tray and leave to cool.

Eggless cupcakes



I find it really hard to bake cupcakes without eggs, this is my fav recepie!

Ingredients
Cup cakes
2 and 1/2 cups plain flour
1 and 1/4 cups powdered sugar
3/4 cup melted butter
8 tbsp natural youghrt which has been sitting out the fridge for about half a day
3/4 tsp bicarbonate of soda
2 tsp baking powder
1 tsp vanilla extract


Butter Icing
200g icing sugar
50g butter
1tsp vanilla extract


Method

Mix the youghrt and bicarbonate of soda in a bowl and keep aside. (use once it becomes frothy)
Mix the butter, sugar and whisk well till the sugar dissolves completely.
Add the flour, baking powder, yoghurt and vanilla extract and mix until smooth, can ad a little water if required.
Put the batter in cupcake holders.
Bake in a pre-heated oven at 180°c until a knife inserted in the cake comes out clean.
Remove from the oven, keep aside to cool


For the icing

Mix all the ingredients together keep whisking till they bind, if you like your icing a bit runny ad a few drops of milk. Then spoon over the cooled cakes. I like to sprinkle a few hundred and thousands for a bit of colour.
